    Winemaking Notes: The 2021 Extra Brut Rosé is composed of 100% Pinot Noir from Topotero Vineyards. The grapes were crushed and cold soaked for several hours to lightly extract color from the grape skins before gently pressing. The base wine was fermented and aged in neutral French oak barrels for 9 months. In spring of 2020 this cuvee was bottled by hand and went on to age for 30 months on its yeast lees en tirage (in bottle). Each bottle was riddled and disgorged by hand and a small dosage of 5 g/L was added. 100 cases produced. Vineyard Notes: Topotero Vineyard is a family-owned, organically farmed vineyard situated just 1.5 miles from the Pacific in Avila Beach. The maritime climate of this area has a heavy influence on the growing conditions of these vines. The combination of foggy mornings, sunny days, and breezy afternoons makes it ideal for capturing the freshness of flavors and acidity in pinot noir that we covet in sparkling wine production. These blocks were planted in 2000 on ancient seabed with silty clay/loam soils. Tasting Notes: Tangerine zest, crisp white nectarine, sea salt, wild strawberry, vanilla cream.

Haliotide is an exciting sparkling wine project focused on marine influenced vineyard sites on the San Luis Obispo Coast. Single vineyard sparkling wines are made in the Traditional Method by winemaker and viticulturalist team, Nicole Bertotti Pope and Lucas Pope. They craft complex, age-worthy sparkling wines that depict the distinctive ocean influences of Chardonnay and Pinot Noir grown in extreme proximity to the Pacific. Wines are made in small quantities and are bottled, riddled, disgorged and labelled by hand.

The 2021 Extra Brut Rosé is 100% Pinot Noir from Topotero Vineyard, a family owned and organically farmed site in Avila, just 1.5 miles from the Pacific.
